truenas disk options installation what is the best setup?

Hello
i am fist time trying to use truenas.
i have an hp 380 gen9 with 2 x xeon 6 core 24 threads , 64 gb of ram , 12 x 10tb seagate drives, and 2 x hp 512 gb sata ssd, 2 x nic 10gb
I would like to use this server for a ransomware protected backup repository for veeam 11.
so zfs snapshots for protection? , how should i use my diskpace?, i just need one big pool for all backups. should i use a third ssd for os?
what should i use the ssd for ? disk cache log cache arc cache?os?
use smb or iscsi for the volumes for the best speed?
enable deduplication?
what type of parity for drives ?
