non-expert here;
TrueNAS Scale is super easy to install and to blow away then re-install so don't hesitate, just jump in and try it out. Go ahead, do something stupid!

I have a 3 disk ZFS RAIDZ volume, so that should be fine. you sacrifice the capacity of one disk for increased availability and data integrity.
I had a prior test system installed onto a SATA m2 128GB SSD, and that seemed to work just fine.
I had a single disk ZFS volume on that test system as well so that works. You might want to confirm if that 8TB disk is shingled or not, as you will want to be careful how you use shingled disks in TrueNAS.
I am not sure if I see much value in having that 8TB volume in the same system as a backup destination, I would much rather see that in a separate device, or at least in a removable enclosure. Backups add more value the more they are separated from the source IMO.
