5600x possibly wont boot without a gpu and may not be supported in core, maybe look at scale because it's debian based with broader hardware support.
B550 Board use realtek nics which are trash look at board with integrated intel cards or an intel add-in card.
There may also be some bios settings that need to be changed to get the system stable.
If possible dont go for gaming gear, for the mainboard look for asrock rack boards.

i've started with a 1600x and right now im on a 3700x and both cpu's wouldnt boot without a gpu, but ymmv.
Furthermore the support for 2.5Gb lan isnt the best on truenas. some got it working, others did not, again ymmv.

Did you get the 5600X running headless sucessfully? Is the 2.5Gb Ethernet recognised?

I am thinking about a similar build - just with a mATX Board like the ASROCK X570M Pro4.

How is Freenas with AMD and ECC? I am thinking about deploying it on TrueNAS Scale .. I assume support is even better there since Linux-based?
