Disc for operating system

Hello, Can anyone who has experience tell me if there are substantial differences between using an M2 disk rather than a normal SSD for installing the operating system?
I would like to know if I can save something on the startup time of the nas.

No, there are no substantial differences, as long as your motherboard supports booting via M.2. But boot time shouldn’t be much of a consideration for a NAS that would ordinarily be up for weeks, if not months, at a time.

Can I add a backup disk for the OS later?
If yes, how should it be done?

It is not generally possible to "backup" the OS on TrueNAS. You backup the configuration, which contains all the details needed to restore your NAS to full function, (with your data pools), after your re-install your boot disk. The configuration backup is an option on the GUI, (I don't remember where).

That said, it is possible to add a Mirror to the boot disk, for those that want / need longer uptime / reduced down time. Or just want to pay for easier management of their NAS.
