Volumes vs Datasets

So back on 8.2 when I created my setup, I created a raidz volume called NAS_VOL... from there, I created volumes under it for folders which I set properties... It seems this isn't as good of a method as using datasets... can someone explain why a dataset is better than a volume and what one can do the other can't (pro's/con's of each). I've read plenty, and I'm not entirely sure there's a reason to use datasets over volumes...
Secondly, if datasets are the better route, is there a way to convert the volumes I created into data sets? Also, it seems you can read/write with cifs to a dataset or volume directly...

I've read that... and I understand the basic differences... though, looking at it now, I can't quite seem to figure out how to tell them apart when you view them in the volumes view. Also, can you convert a volume to a dataset or vice versa?
