Because there's a reason the part is clocked as it is. You want your server to be rock-solid reliable, and using parts outside their performance specs is not a good way to accomplish that. If you need more power (though you probably don't), use a more powerful CPU.

ok so after looking around again and using your advice i came up with the following system:
Now I know RAIDZ1 uses a parity drive will i need to buy anymore drives? Im looking at wanting 3tb of storage on my freenas box. I changed how much memory i want to allocate towards its functions also:

250GB Time machine
1TB OwnCloud
1.7 TB PMS media files
250 SSD >>> Plex software/jails

I know I probably annoyed some of you with my lack of experience, for that I am sorry. I think I have something that will actually work now lmfao.
And for jails i understand that they are a safe environment for software (like PMS) to run in. That being said will i be able to break up my SSD for these jails? Like once I install PMS on it will i be able to partition the rest of it to use for OwnCloud, etc.

If you want 3TB of usable storage, you'll need more (or larger) hard drives. You shouldn't use more than 80% of the storage space, as FreeNAS will start to lose performance once the volume gets too full. You should also consider that your storage space needs will certainly grow with time, so you don't want to start out already at 80% full. Also keep in mind the difference between TB and TiB.

250 GB for Time Machine seems quite small to me, as it is an incremental backup system.

You can calculate the usable storage space provided by various numbers of drives, drive sizes and RAIDZ levels, using the nice web app created by Bidule0hm - instructions are here.

I have a 250gb macbook pro, which is why the time machine storage is so small. As for the hard drives oh ok that means ill have to add another 1tb drive which will give me 3.4tb to use according to that calculator.

I didn't mean I am going to use that much memory for those functions but rather, that is how much memory i can use towards them (my maximum). I revised how that will be now (again) this will probably be a final allocation to each function, using your advice:

260GB TimeMachine
1Tb Owncloud
1.5TB PMS
840GB for personal stoage

Either I have misunderstood the number of drives you plan to use, or you are using that calculator wrong. You said you planned to have three 1TB drives. Now you say you will add one more, for a total of 4 drives in RAIDZ1. That gives 2.362 TB of usable space (i.e, after accounting for space used for parity, meta data, and assuming you will not fill the space more than 80%, you can store 2.362 TB of data).

Actually it says:
Usable data space 2.148(TiB) 2.362(TB)

You would have to go with 5 1TB drives to end up with 3.1 usable

Is there anyway around this? I understand that WD Red drives have high failure rates with the more capacity they carry. Which is why I'm thinking of using 1tb drives instead of something bigger. I am also trying to cut down on cost of memory.

At your Canadian site 5 - 1TB drives = $425 before tax/shipping (3.149TB usable)

However 3 - 2TB drives = $330 before tax/shipping (yielding the same amount of usable space for less$$$)

ok that makes sense I will go with that then and cut off 100GB from personal storage to make it 740Gb. Should i be good for a build now? Also about the 120gb SSD will i be able to partition it according to jails? or will it be used up for 1 jail

You don't 'partition' any drives in FreeNAS. You add it to a pool (on it's own, do not add it to your main pool) and put your jails dataset on it. FreeNAS will handle the rest.

Ok, so I would use my SSD just for pools then (such as PMS software), and my hdds will be used for pools of data for whatever I'm storing there?

You would create a pool from your single SSD (there is no redundancy there), then you can set the jails to use it as their location. Then you add storage. It's all right there in the docs....
I know you may be annoyed with my lack of knowledge, I would read the docs but atm I dont have the time cuz of exams. The time I'm not on here I'm studying lol after the 23rd i should be free and will read everything.

Also decided to go with 3 WD Green drives, since they are cheaper I know that i will have to us waddle to adjust the idle setting on them.

You do realize the reds have a warranty of 3 years vs. 2 years for the greens right...

RAIDZ1 is generally discouraged on large drives, as the time to rebuild the pool is very long after you replace a failed drive, and the process of rebuilding the pool works the drives very hard. If you have a second drive failure while the pool is being rebuilt you will lose all your data.
