Thanks for everyone's assistance and I have progressed a lot since my first post.
Truenas is installed Zfs with nvme drive for cache.
Plex installed and fully working.
Dyndns installed and sort of working.
The missing bit is how to manage my files externally.
I have set up plex to be read only but I need a way to update my files.
Yes I can probably set up ftp sftp server or something and allow those port through the firewall...
I was wondering if there's a "preferred" or "smarter" way.
When you want to upload a file to your data set to share on plex or do maintenance on your Truenas when you're abroad.... how do YOU do it ?
How do "the grownups" do it ?
