My problem is that it only wants to use one connected and not both.

LACP is on both FreeNAS, ESXI, Switch.

That's normal. LACP allows you to bond connections together to allow more than one client to reach GbE speeds. It doesn't magically give you a 2 GbE connection.

The connection is aggregate connectivity to the network not bandwidth between endpoints.
