Ok, so I can recreate the target pool encrypted, with its own key, as before?

Yes. Its the same thing, only with the native zfs encryption the replicated dataset would have the key of the source dataset, in this case it has its own key which you set.

Keep in mind, it will inherit target pool options such as dedup and compression. If you want specific settings or if the target pool doesn't match your source, create a dataset with the options you want and place the target inside that.
