Installed new hard drives to replace current zpool, "volume1". I obviously couldn't give it the same volume name so for the time being I named the new zpool "volume2". Migrated the data over and booted into single user mode to change the volume name, volume1 -> volume1_old and volume2 -> volume1 (using zpool import -f -R /mnt volume1 volume1_old and then zpool import -f -R /mnt volume2 volume1). Restarted into normal mode and oddly the old/outgoing volume is still showing up as "volume1" and "volume2" is showing up as missing/can't get space (in FreeNAS web UI - > Storage -> Volume). Furthermore, neither volumes/zpools are listed in /mnt anymore (ls -lah /mnt). I caused enough damage trying to do this with just the help of Google, so I figured I ask here. How do I fix this so the old zpool is properly renamed "volume1_old" and disconnected, the new zpool is properly renamed "volume1" and the new zpool properly auto mounts at /mnt/volume1??

P.S. - Running "zpool status" confirms the new zpool is still there.

Have you tried detaching both pools in the GUI and re-importing volume1?
