So I was able to install Ubuntu via VM, it was very straight forward after setting VNC client to high quality. On boot I get the following screen.

I can navigate to boot options and see grub, however it doesn't seem to do anything after selecting it and rebooting.

I am able to boot into Ubuntu using the following: https://wiki.debian.org/GrubEFIReinstall

I installed Ubuntu Server 16.04.2 and after the installation, I removed the CD-ROM device and rebooted and it worked. However, the second time I tried to boot the VM, it failed and dropped to the EFI console.

However, all I had to do was boot with the install CD and select the "Rescue" option. I can't remember exactly the steps I took, but it found the disk and fixed it. I think it said something about putting a second copy of the EFI files somewhere and I picked that option.

Sorry, I didn't write down the exact steps, but it definitely worked without resorting to anything other than the install iso and the GUI (well, text mode UI).
