I take it they will be their own pool? A vdev is part of a pool. Once you have the new pool you will still need to make a zvol. This is the block device that will be shared using iSCSI.2 840 Evo’s will be a mirrored vdev in FreeNAS, passed to ESXi for other guests to boot from.
Linux VM are relatively light weight. Feel free to break this up. That way you can reboot and patch one VM without taking down all of your services.One guest will for sure be Ubuntu for automation/syncthing/openvpn/plex.
Remember vdev is part of a pool and a zol is carved out of a pool.Ubuntu will boot from 840 Evo vdev
I cant comment on the exact hardware choices but otherwise dive in and don't expect it to go perfectly the first few times. ;)
