Asrock H270M-ITX/ac Mother Board is compatible with FreeNAS 11.3?
Please it's possible suggest me also a brand for RAM memory (8 GB?)

It's likely to work, but you may be better off with an Asrock server board. See https://www.asrockrack.com/general/products.asp#Server. I run FreeNAS on a E3C226D2I with 16 GB Kingston ECC RAM, and it's been solid as a rock.

If you do opt for the E3C226D2I, there's a hardware quirk you'll need to be aware of. I had to set a sysctl tunable kern.timecounter.hardware=HPET in order for the web UI to reflect the correct time. The same may be true for the other Asrock server boards. Otherwise, it's been completely reliable in my experience.

Is there a reason why you must have an ITX board? going up one size to mATX provides a whole lot of features and possible expansion options in the future.
