You can boot from just about anything. As long as the system dataset is moved from the boot pool almost anything will do. Just remember the boot pool uses the entire space of the boot disk(s)
Do not use any old SSD as a SLOG. It needs, as you have been told several times, low latency, high speed, PLP and log endurance. There are very few SSD's that will do all of these. Optane ticks the box and there is some other rarer stuff (RMS-375 although I suspect you may need to be sitting down when the price is mentioned)
