I need to increase my boot USB from 4GB.
The manual tells us that 4GB is the minimum anyway.

Can I simply take a 16GB USB drive and using a utility - like Acronis - and disk copy the contents form the smaller to the larger?

Also anyone got any recommendations for faster USB drives? 16GB drives are very low cost - so I thought I may as use fast ones - to speed up the boot?

As USB sticks are low cost - is it worth considering getting two and having them mirrored? How do you enable mirroring on the boot USB device? How do you setup the mirror?

Yes. See the section "mirroring the boot device" or something similar in the manual, it's very simple ;)
