This "problem" still exists after 2 years.
It's not a great idea for Plex container to use a UID/GID like a previous user (that on Truenas Scale, the UID/GID 1000 is linked to the first local user different from root).
I had to fight with this for hours before finding this thread, and anyway I wasnt able to fix apart from opening the media dataset to everyone, that it's not a great thing, because the UID 1000 is already taken.
I would had to change a lot of permissions and ACLs to fix this and it had took hours!
But, thanks to usern that shared the link on how to change the container UID/GID, it was just a 5 minutes trip, changing to a non-already-used number and setting the permiissions and ACL for the dataset in the right way
