S3 service shall support custom environment variable

minio service do support a number of configuration via environment variables. If the s3 service GUI page allow enter additional key values setting, it can further expand the usage of the s3 service.

This has been added for the SCALE implementation of Minio / Apps. Its how I've been setting up to test distributed mode as well :)
