Plex via Plugins, or as via Ubuntu VM

Hello

My current setup is using the Plex Media Server plugin, which works reasonably well. Does anyone have any experience running Plex through a Ubuntu VM (or other OS for that matter)?

I realize this will be less efficient, but I am considering using one VM (Ubuntu) for both torrenting, and Plex Media Server. Max simultaneous streams are 3-4.

My setup:
MB: Supermicro X9SRL-F
CPU: Xeon E5-2650 v2 (8C/16T)
RAM: 64GB 1600MHz ECC (4x16GB DIMMs)
VDEV1: 10x10WD Red in ZFS2
VM/Plugin drive: Intel 180GB SSD
NIC: Intel X540-T2 10Gb 2xRJ45
HBAs: 2x LSi 9211-8i

Also, I have three available ethernet ports (two on the MB, and one on my 10Gb NIC). Right now, everything is using one 10Gb NIC. Is there any usefulness in giving the VM its own physical connection, as opposed to share one physical connection, as they are doing now?
