Now, you've lost me. Let's take a step back. Can you provide a screenshot of an expanded view of Storage > Pools?

What's causing some confusion is the use of the word share in your dataset names.

it is also the share use for win backup

Does this backup to the entertainment-share dataset?

Secondly, what does your SMB share map to? A screenshot of Sharing > Windows (SMB) shares > sharename > Edit might be useful.

I have a SMB windows shared in group "shared", and the plexdataset, mounted inside that share.

Does win backup ever write into the entertainment-share child dataset or only to its parent dataset NitroNAS?

and, BTW, strangely, plex is a memer of group 'shared'...

When win backup runs, which user is it running as?

I have 2 user taht use the share, it is also the share use for win backup
Are all these users in the group account shared?

That is what I have to do each time for the plex to see the new files...

Can you do this step, but select Apply Group as well (not sure why you're not doing this)? After that, we'll only use Windows ACLs to fine-tune. Basic permissions are initially set up from this dialogue box (once only!). By applying this each time, you are destroying any Windows permissions that are later applied. (I also hope you're not doing this to the parent dataset NitrofNAS!. That's a double NO-NO).

Next, I'd like you to create an SMB share that maps to the entertainment-share dataset. The SMB share that you have at present is against the parent dataset NitrofNAS. Once you've done that, let's have a look at the permissions of this SMB share (screenshot please!). The Windows ACL should display three entries. It should show that plex and shared have full access and should reference Everyone as well.

What's complicating matters is this hierarchical structure you have for the entertainment-share dataset. Any permission changes you make to the parent dataset or the SMB share NitrofNAS attached to the parent dataset has the potential to undo any permissions you set for the child dataset. That's a big NO-NO to keep in mind if you stick with this structure.
