I am a newbie with TrueNAS so don't beat up on me too bad.

I have an HP ProLiant DL380P Gen8 server that is no longer being used in my virtualization environment. The machine is loaded with 128gb of RAM and has 8 1TB drives and will make a great TrueNAS box. The only issue I am running into is that I must create/configure a RAID array before I can install TrueNAS. I need some recommendations on best practices on what RAID configuration to use in the scenario. Any recommendations would be great.

No, you most emphatically should not--and if the disk controller in that system requires you to do so (and can't be configured in such a way as to not require it), you need to replace the controller. See:
