Migrate Plex from Core to Scale

I searched and found sooooooooo many threads mentioning how to do this, but they all assume the user has more advanced skills than I possess. Can anyone please walk me through moving my old Core Plex configuration over to a new Scale Plex install like you are talking to a 5 year old? I have no idea how to browse or copy something from the iocage folder so saying "just copy A to B" isn't going to cut it. Original Plex install was made with the Core plug-in a few years ago so wherever that default location is. Plan to install the new Plex install using the apps section. I think I understand how to point my media folders over using host paths, but would like to retain records of what was watched or not. Thanks.
