Migrate my server from 1 test hdd to new ones

Hi all,

I recently setup a test server to see if a NAS was suited to my purposes. I have an old i5 2400 with 16gb DDR3 ram that I wanted to make sure could transcode 4k before I invested any moolah.

I setup my server with a single 5tb drive and loaded up all my media. Works a treat.

Now I have gone and blown the bank with 2x 4tb ironwolf drives but I don't want to lose any of my data from the 5tb.

I plan on copying all data onto my windows PC from the 5tb, then installing the new drives, copy from the windows pc onto the new drives and bob's your uncle.

Couple of questions though.

Can I combine the 5tb with the 2x4tb drives in RAID? I don't mind losing 1tb from the 5tb.
If I get rid of the 5tb all together (Not a NAS built drive) will I lose all my jails?
