After building only desktops for the past 20 years or so, I started down the same path for my FreeNAS upgrade and fortunately that effort came to an abrupt end. Thankfully, I came to my senses and started doing my homework before jumping in with both feet. With a lot of help from the generous donations of time and expertise by distinguished authors of this group, my current direction (with 4 WD red drives already owned) looks like this:
Also using a WD Raptor 36GB for boot device. It was laying around collecting dust so it will be put to use instead of a USB stick. Holler at me if I am about to do something stupid here!

Adding a
SeaSonic S12G S12G-550

to the build. Considering using a USB stick for the boot device instead of the WD Raptor. Any operational advantages or disadvantages?

Tried to catch the PSU order but too late. Do I have a problem?

Ericloewe's response was more of a suggestion to save you a little coin on an equally good PSU. If you already ordered it I wouldn't sweat it.

Actually, the G-Series is slightly better (and more expensive) than the S12Gs. S12G will work, so it's not a real problem.

Up and running burn in. Assembly was straightforward, the chassis is an Antec 302, not the quietest case but provides plenty of ventilation. I can add two more fans and two more drives if necessary. Currently running 5 fans. Drives are cool to the touch running heavy workload.
