I have a volume called "data" path "/mnt/data"
This is also mounted as an CIFS share for my windows machines.

I intend to use NFS for my ESX (personal lab machine). If a map /mnt/data as an nfs share in esx all VM I create will end up in root catalog and this does not look nice. I would lime to mount my nfs share to /mnt/data/***/esx/

How do I do this?

You could create a dataset on top of your data volume to contain all your VM's. This gives some additional benefits. If you want you can set a quota on the dataset, or specify periodic snapshots for the the dataset.
