Help me plan!

So I have the following

System
64GB DDR5 (non ECC)
i3 12100

Disks
5 x 4TB
2TB NVME Drives x2
I have quite a few standard 500GB SSD's lying around too.

(I also have 16TBx2) but may need to exclude these as they have all my stuff on via Proxmox currently.

Reasons for NAS
Mainly a transcoding chip for media (i3 12100)
NAS for files for Mac, pictures, media, basic stuff.

I don't have ECC but reading online ZFS still seems to be the best even without ECC? I could spend 1k on W680 board but Im just running a small home NAS with some Apps ect here and will be backing up and potentially archiving.

where im confused and need help

1. Should I be using 2TB x2 for Boot and partitioning it and using partitions for things like l2arc, slog ect (I barley have any idea what these really even do)
2. Im really confused about the Caching options when making an array, what should I pick, None and where should I allocate the drives for my purposes
