So last night I noticed that there was an update available, went through the update process (which I had done before successfully). After completion, the machine rebooted but I went to bed. This morning I noticed that FreeNAS was down, on the screen I have the following error message:

GRUB Loading..
Welcome to GRUB!
error: file 'normal.mod' not found.
Entering rescue mode...
grub rescue>

Being new to FreeNAS, I am a bit stumped. Any help appreciated.

PS: I am running FreeNAS from mirrored twin USB drives (16GB each). Not sure if the files in both were damaged during the update process

The update seems borked.

It should be theoretically possible to rollback to an older snapshot and boot from that. Are you given any such options?

Worst case, you reinstall FreeNAS and upload your config.

No, the only option I am given is through the grub rescue.
