Comparing used server options

I'm very new to FreeNas, so I apologize for any ignorance on my part. I've tried to read guides and absorb what knowledge I can.

I want a box that can
- Hold photos
- Store OBS recordings
- Hold my steam library
- Run Plex
- Download torrents and sort them into folders
- Backup to backblaze

I don't need super performance or reliability, I plan on backing up the photos and anything unreplaceable with backblaze. I do need something reasonably small, with lowish power consumption, and quiet enough the wife doesn't complain.

I currently have two 3tb drives in my desktop mirrored, and I purchase three new 3tb drives for this build. I was planning on building the three new drives into an array, transferring the old data over from the mirrored drives, and then adding those drives to the new array, so I would have a total of five drives with 1 redundant, for 12tb usable space. Is that doable?

I googled and was reading this thread: https://forums.freenas.org/index.php?threads/first-build-budget-freenas-for-home.61978/ and saw recommendations for R510/710 Servers, Xeon Workstations, or HPE ML10 G10 servers.

The HPE ML10 G10 looks like a good fit for me, reasonably cheap, small, and hopefully quiet, and can fit up to 6-8 drives. Would I be alright buying something like this?

As recommended in the above thread, I would addon some more ECC ram, a power adapter, and a displayport cable/adapter.
