appending RAID1 to existing 1 disk volume

I'm using version 8.3.1 - I wanted to get to know the OS a bit before investing in some new HDDs, so initially I had an 1 old 320GB HDD that I've set up a volume, some datasets, CIFS, plugins jail on, transferred some data etc... I now have 2 new 2TB HDDs that I want mirror.

Is there a way to append one of these to the existing volume (initially set up with 1 HDD) mirror the data from the old disk, then replace it with the other 2TB to extend the volume? (I only have 2 sata ports)

or is it easier just to start from scratch?

Sorry if this is a really stupid question - I'm probably going to find some tutorial to answer to my own question about 5 mins after I post this...

I would make a new zpool, copy the data over to the new zpool, destroy the old zpool and rename your "new" zpool to the old one.

This is easiest and optionally you can skip the renaming.

Otherwise, how many hard drive bays do you have? If you have only 2 then shutdown, swap in one new drive, partition it via the CLI, add it to the existing mirror (creating a degraded 3-way mirror), shutdown, swap out the remaining old drive with the other new drive, partition it via the CLI, add it to the existing 3-way mirror (creating a degraded 4-way mirror). Once it finishes resilvering, detach the old drives from the mirror resulting in a simple 2-way mirror.

Thanks for the help - I did end up going the simple route by wiping the existing volume, creating a new one with the mirror & re-copying the data as it wasn't too much,re-naming it the same as what it was before & the settings for the CIFS, snapshots just needed some re-linking.
