vdev layout question (Z3, Z2, 24 drives)

Hello All.

I currently have:

6 X 1.0 TB drives
4 X 1.5 TB drives
8 X 2.0 TB drives

In 6 drive (all 1.0's in one, mixed 1.5's and 2.0's in one, and all 2.0's in one) vdevs, and the larger two in one pool.

I'm ok with buying up to 8 more 2TB drives (to aid in data transfer, and to have spares).

I'm in a supermicro 846 24 bay chassis, and I'm itching to use the extra (currently empty) 6 bays.

Should I do the boring thing and add another 6 drive vdev, or should I re-organize to Z3 with 11 drives per vdev or something that I haven't thought of yet?

Mostly, the storage is "idle". One plex server streaming to at most 2 devices at the same time in 720p or 1080p. I have a small vbox setup running for a debian webserver with 256MB of RAM serving mostly static web pages. Other than that, some SMB shares for family photos/videos, and video/tv collection.

As far as system specs go, it's:

CPU: E3-1241 v3
RAM: 32GB ECC, 4Xmicron/crucial 8GB sticks
Boot: USB sticks x 3
Network: Single 1GBe
