Striping vs Mirror

Hello there!!

I have seen a few posts but I just want to clarify. I currently have a 80tb striped pool that I set up a while back because I have another backup of the data and the drives are enterprise spec and not refurbished. I now am contemplating moving the pool to be mirrored and buying another 80tb but this is a lot to buy. If one drive fails is it true all the data of the whole pool is lost? If I did want to create a mirror from the existing how would I do that? If a drive were to fail could I put a new drive in and will the data that wasn’t on the failed disk still be there?

Any advice would be great!!

Also can I extend each vdev in the pool one drive at a time to mirror or does it have to be all at once? Is there a way to replace a failed drive in a striped pool?
