Setting up Mac and Ubuntu Share

So I am setting up my NAS. I have Mac and Ubuntu machines at home. Would like to be able to connect occasional windows machine, but less of a priority. It seems from what I have read that setting up a Unix share is the way to go. Can anyone shed some light on this subject? I am a little lost.

When I was playing with it earlier, seems like both machines could access either AFP or or Unix.

NAS will be used for documents, music, photos, video... for now. Looking at doing Plex server.

If you're using MacOS and Linux exclusively, then I suggest you use NFS as both OS's can utilize it. The other option being SMB, which will allow any future Windows machines access the share too.
