How to copy a SSD.

I have a question. I have a 120gb SSD which I have all my jails on. I am working on some things and would like to know if and how I could put an extra 120gb SSD in this server and then copy or mirror the first one so I have a backup in case have any issues?

You might not even need to do that. You can take a snapshot of the drive, make your changes and if it doesn't work, just roll back to the snapshot.

It is also pretty easy to use the zpool attach command to add a drive to a single drive zpool and then use the zpool detach command to take one of the drives out of the mirror. I will link a reference:

You can do the attach through the GUI to take a single drive zpool to a mirror, but I don't know if the GUI has a facility to detach a drive from a mirror. You might be able to find it in the Documentation:
