It's configured the same way it was before, as nothing has changed with it's configuration.

Can't help much if you don't tell us what that "same configuration" is.

I booted up the beast and Plex was accessible, but it's not scanning the library.

Looks like I get to spend a bit of time fixing a small error on a large file transfer and get the files moved to where they should be...

After I get all that stuff moved, I think I'll try reinstalling Plex.

A network configuration error was suggested (for the cannot find template thing), so to check, we need know how a little bit on how your network is configured in FreeNAS. IP (fixed? No conflicts on the network?), Gateway, Subnet, DNS (your ISP DNS). Can you ping www.google.com for example, or any other public web server from your FreeNAS box?
