FreeNAS + Plex running on USB.

I've gotten FreeNAS installed on a USB and running but for the life of me I cannot figure out how to get a jail setup on the root USB drive....

Ideally I'd like to be able to image the whole drive before updates should plex ever have an issue, if I do slap in a new USB and start right back up....

You don't run other things off the OS drive. You set up a dataset in your pool for jails and use snapshots to roll back changes should bad things happen during an upgrade.

Hmmmm I'll have to read into jails and snap shots seems easy enough though. Thanks guys!

The plugins system is really just creating a jail for you. All you have to do is set up the snapshot schedule.
