This is my setup:

PC with 4 disks: 1*1TB and 3*2TB. ESXi 5 is installed on the first disk. The FreeNAS virtual itself resides on the first disk as well (no RAID). The three 2TB disks are available to the virtual by means of physical Raw Device Mappings in ESX. They are configured in RAIDZ.

Now what if ESX dies on me? Would it be possible to boot the server from a USB disk/stick, import my config, and have the RAIDZ available? So without the Hypervisor layer in between. I would be inclined to say it would be possible, as the disks are directly presented to the VM. Could there be any ill side effects in just trying this scenario? Is there a possibility it would destroy the existing RAIDZ?

In theory, yes.

However I'm not sure whether ESXi does any kind of cache for the disks presented to the VM, if it does then you can lose data.
