Dell R720xd configuration

I've had my r720 setup and running for about a year and am now thinking about restructuring the drive layout. Currently I have the drives in a mixture of raid 1, 10, and 5. No slog or l2arc at the moment. Connecting the storage via iSCSI to ESX servers for VM storage. The Sabrent driver are new and I'm intending on using them for caching not storage. I don't have a power protected drive but all of these servers are running on UPS so I'm not sure if that gives me a pass on what I can use. I'm looking for any recommendations you might have on how best to utilize the hardware and if needed I can add a little.

So my primary use case is VM storage for my home lab. I'm hosting VMs on 2x Dell r820s with the same Intel X520 NICs for 10GB connectivity.

8x 16GB 1600 MHz for 128GB of RAM
NIC Intel X520 2x 1GB and 2x 10GB
Booting from mirrored SD cards but moving to SSDs mounted in the rear flex bays
Flex bays have 2x 120GB SSDs
Dell H310 6Gbps SAS HBA w/ LSI 9211-8i P20 IT Mode
Syba Dual M.2 M-Key NVMe Ports to PCIe 3.0 x16 Bifurcation Riser Controller - Support Non-Bifurcation Motherboard (SI-PEX40129)
with 2x Sabrent 1TB Rocket Nvme PCIe 4.0 M.2 2280

The drive bays are completely full. About half of them are SSDs and the other half are 10k spindle drives. Can provide a list if it helps.
