Convert old freenas servers to jbods and attach to new server? Or run 3 servers

Should I convert my 2 old servers to jbods by removing the old motherboards and adding some type of internal to external sas/sata with cables to keep the 2 old pools or just stick with 3 servers? They run backup, plex, dns, mineos(private server for my son and a couple friends), homelab vm's, etc that are now better served from the new large server. All those services are on the new server now except backup. I am not sure of the best option.

I am a long time Freenas user/builder/experimenter. I built most of my systems from spare parts I had lying around and then updated/improved over time. I have used these forums as guides and support to mostly help me do the things that were almost always "not recommended" but made work because those were the parts I had. I have since built a 3rd system that is much more powerful, larger, and using some real server hardware.

The only issues I have had with the new build was one drive failure in the first 280 hours (thats why I test first) and then some spurious data errors that I isolated to overheating hba's. (55c). After I added a couple of fans to directly cool them (38-42c now) there have been no issues after a few weeks of testing.
I have now moved the bulk of the services to that machine.

Now I am left with 15 drives that have plenty of life left and I would like to continue to use as backup storage. I keep multiple backups. I dont like to lose things. Since this new system is so much better as a server than the other 2 the only thing I really need to keep are the drives and pools/vdevs. My idea is to keep the boxes lose the motherboards/cpus, convert them to jbods and attach to the new server. I just am not sure how to get there in a reliable way. Or should I even try?
