Add a new disk

New to TrueNAS. Installed using 1 HDD (4TB) for media and plex is running great.

Questions:
How do I go about adding another HDD (500GB) for applications and general storage (different purpose than movies)?
I currently have only 1 drive in there and when I created the first pool, it showed "Stripe". I know it's vulnerable for data loss. How to circumvent the error?

You can go to Storage - Pools - ADD another pool, and move the "available discs" to "data vdevs".
You can´t choose anything else than stripe for a single disc, as raidz needs at least 3 discs and mirror 2 discs.

You could add a 4TB or larger disc for your first 4TB "stripe" pool, to get a "mirrored" pool.
Then you will get redundancy, not more storage space.
