Given that your setup should perform admirably, I'd file a bug report regarding GZIP's behavior.

Everyday I send about 200 gigs of backups to a gzip9 dataset. But that's over NFS from ESXi.

This is to my second nas, which is still running on desktop hardware, with the processor being an i7-920.

I have previously sent large amounts of data over cifs to a gzip9 dataset, but I don't think any one file was larger than about 4 gigs.

It's not a bug. The problems experienced with gzip are based on a combination of factors to give you the behavior that I explained. It's not a bug and the fix is to use reasonable compression routines with your intended use case.
