Yes.

3 way mirror, remove one drive. Take that drive and a new drive. Add as a new mirror.

Now you have twice as much space and performance.

So something along the lines of:
zpool split pool new-pool [device]

zpool split pool new-pool [device]

Not even that complicated.

zpool detach <pool> <device>

Split splits a mirrored pool into two pools. Detach just removes the device.

You can use detach in a triple mirror, but ZFS won't let you do it on a double mirror... But split will work

Fascinating how much more advanced ZFS is over tradational RAID. Why would anyone use hardware RAID anymore?
