Whats the best format can i use for store cold backups that can be mounted in truenas and linux systems? I want to copy the backups in an external hard drive from the truenas system and if is required restore them to the server from my personal linux OS.

Thanks

Could be an option, i dont think there is a way to mount it on Windows if required, I dont use windows anyway. I tried the filesystems that appeared to choose in the import disk menu, cant write to NTFS i dont know why... No space left on device it says.

NTFS is read-only in TrueNAS. You asked specifically about TrueNAS (CORE) and Linux. For this combination ZFS is the best option.
