snapshot timing

what time do i set in snapshot task so that it will basically disable the 'begin' and 'end' fields. my brain does not functionally understand how or why there is timing their so i would like to just set them to values that make those fields not matter.

(i do understand how basic this sounds but i have a very hard time with phrases that use things like 'before this time' or 'after a time' technically it is is always before Monday, just like today is after Saturday)

Which part of http://doc.freenas.org/11/storage.html#periodic-snapshot-tasks does not make sense to you? Or to put another way, when would you like your snapshots to run?
