Proposed upgrade

While I do have a working system I have plans to do some upgrades and would like some input from others.
Current system in sig.
Upgrades intended (hopefully soon)
8 x wd red 2tb drives, 6 for pool and 2 cold spares. This is where it gets tricky as currently I have 6 x 1tb. Do I just slowly replace them one by one and once all 6 are resilvered the new size will be available?
Along with the new disks I plan on using a ibm m1015 in IT mode.
I plan on upgrading my case to a define r5.
2 x transcend ssd for boot.
I think that's all.

Yes, assuming the autoexpand property is enabled on the pool.

When buying new drives, consider $/TB. The 2TB drives don't come out too well on that metric these days.

I just checked and autoexpand is turned on on my pool, so its just a matter of replace one, wait for re-silver, rinse and repeat till done?
As for $/TB these are my choices. Opinions?

At those prices, 3TB is the sweet spot, with an $11/TB advantage over 2TB. Where I live, 4TB is better.

If you factor in the total cost of your system, and the inconvenience of upgrading again later, you might want to go larger than 3TB, but only if there's any chance you'll eventually need that much storage.

I think the 2TB is more than plenty as at the moment I'm using only about 50% of my raidz2 storage pool which has 6 x 1TB so doubling my capacity should be more than sufficient but if funds are free enough for the 3TB upgrade then that's the way I'll go as I'd rather have too much free space than run out.

You might also consider rebuilding with a simple mirror of two large disks.

6TB raw: 2x 6TB @ $690
8TB raw: 6x 2TB @$768
8TB raw: 2x 8TB @ $918
12TB raw: 6x 3TB @ $954

There are tradeoffs with mirrors vs RAIDZ2, but it give you a lot of flexibility.
