Is there more detail doc anywhere besides the wiki?

The wiki does not seem to explain much in detail.

For a Noob that wants to understand what most of the capabilities of the server, what do you recommend?

For now, your best bet if the answer you're looking for is not in the wiki is to ask on the forums. FreeNAS 8 and its documentation are less than 2 months old, so it will take some time to flesh out all of the documentation. The information in the forums helps to build the documentation so you are actually helping the documentation process by asking and answering questions in the forums.
