How would I recover data from my NAS?

I got two drives in Raid 1 in UFS format, let's say something happens and all I have left is one drive, how would I go about actually reading the data on it?
I assume I can't just plug it in on another computer via Sata connector and then it would show up in Windows as a drive?

It won't show up in Windows, which doesn't understand UFS. But you can add the ability to read UFS to Windows, see http://ffsdrv.sourceforge.net/about.php

You could also boot that Windows computer off a (freshly made, if necessary) FreeNAS USB stick, and then move the data around.

This isn't a very likely scenario, though - you'll either have a disk die (in which case you put in a new one and re-mirror onto it) or the computer dies, in which case you have both RAID1 disks (and proceed as per the FreeNAS USB stick above).
