FreeNAS as a DVR for IP Camera what happens when i run out of storage

I currently have 9 Amcrest IP8M-2493EB with continuous 4K H265 stream going to a FN 11.3 server with a single 8 terrabyte HD

Currently i am using NFS to direct stream the video feed directly to the FreeNas box which is working perfectly fine

Eventually i will run out of space and im not quite sure what to do about it

Amcrest has an Storage > Record Control > Disk full > Overwrite, so i am not really worried from the Amcrest but i dont know how Freenas will behave once it hits 100% full

At most i only really need like 3 days worth but this is enough to hold a couple weeks.

QUESTION #1

How do i make sure FreeNas doesnt die when i hit max storage in my dataset and my cameras seamlessly begins to overwrite old video files

I was thinking about just setting my quota for the data set to around 65%
but
according to Cyberjock even if the pool is half empty if i fill my dataset in the pool to maximum i cant do anything else with the dataset... is this accurate?
