freenas and plex build

I had an old set up of FREENAS 9.3 on a server and need to update. I have four 10TB WD red drives and one 150Gig SSD with freenas and wanted to use another 150 SSD to run the plex software in a jail. I did it before but now I'm not sure. Everything that I have found puts the plex on the same RED drives. Is that it still possible to build it with 11.2? Thanks

Yep sure, just change the iocage store:
Set up the 150G SSD as it's own pool (VMStore or what ever, this will mean that there is no reduncy unless you back it up to the main pool (zfs send|recv)) then in the jail config select that pool

Jails are mostly static, what you could do is to keep them in the storage pool and mount datasets for any databases or other high IO activity from the SSD, eg /var. But I would still get a second to get a proper mirror and redundancy

I run my jails on an NVMe drive. No problem setting up a volume just for jails. As @blueether commented, you have to mount the drive, create a volume on the drive, then select that volume as the root mount point for your jails. All of this can be done through the GUI.

I did not mirror the volume for my jails. Don't really see the need for that. However, I do make regular backups of my Plex database.
