I have never used FreeNAS before but I am trying to setup pools on my FreeNAS server. When I go to set it up and select disks there is no disks to choose from. I only have one disk. Do I need multiple?

Yes. At least three: A small boot drive - 40GB SSD, or whatever you can get - and two data drives in a mirror.

Can I do the same with partitions?
Not really, no. The boot device is the boot device, and isn't to be used for storing data. If you need to boot from and store data to the same device, FreeNAS is not the solution for you.
