Hi! This is my first build and would like some feedback.
I’ll use Plex, zoneminder, homeassistant, etc (nextcloud, opensense, pihole, adgaurd).

Plex will have a max transcoding of 1 - 4k and 1 - 1080p video simultaneously.
Zoneminder will have max 4 1080p cams @ 2 -12 fps

Will an AMD Ryzen 5 5600g(70usd) be enough or should I go for an AMD Ryzen 7 5800x(105usd)?

Will 16 GB RAM be enough or should I go for 32GB?

The 7 5800x does not have integrated graphics, so no video encoding which you will probably want for Plex transcoding. The other one should be fine.

Another thing... I don't know if Plex supports amd hw transcoding on Linux, it works on windows apparently. You could opt for jellyfin which does support amd hw transcoding on Linux.

Jelly is fine too.
Can't you do CPU transcoding? I meant that. Isn't it better than iGPU transcoding?

You can use the CPU to transcode, the thing is it is slow and clogs up the CPU usage. If you can you should offload to a external GPU or in your case a igpu, this will be much faster and you can still use your CPU normally.

I don't believe that Plex supports transcoding on an AMD iGPU

Oops didn't mean to send that comment alone. Anyways on that site it says that AMD is supported but not properly tested.

I know about that, but that's Hardware acceleration for GPUs, I meant Software transcoding(H.264 I think? the default one).
Plex has CPU guidelines based on the PassMark score for Software transcoding. [here]
4K HDR (50Mbps, 10-bit HEVC) file: 17000 PassMark score (being transcoded to 10Mbps 1080p)
4K SDR (40Mbps, 8-bit HEVC) file: 12000 PassMark score (being transcoded to 10Mbps 1080p)
1080p (10Mbps, H.264) file: 2000 PassMark score
720p (4Mbps, H.264) file: 1500 PassMark score
So I thought there wouldn't be problems with Software transcoding in AMD.
And the Ryzen 5 5600g has a score of 19928.
So this should work, right? Or is my theory wrong?

No - your theory is right

It depends on what you want the VM's & apps to do.
You probably want considerably more memory than 16GB.
