I have Freenas 8.3.1 with one volume at /mnt/volume.
Set up everything (users, groups, permissions, CIFS share to /mnt/volume, activated CIFS service) and I can read and write in /mnt/volume from Windows Explorer.
Everything works like a charm.
I can create (rename, delete) a new folder (i.e. /mnt/volume/folder1) from Windows Explorer.
Is it correct to create new folders from Windows Explorer? Or is it correct to create a new share for every new folder working from Freenas GUI via web browser?

That very much depends on your requirements. If you create ZFS Datasets via the GUI, you can share them individually and therefore also control the access rights individually. Also you can create snapshots from individual datasets and not just from the whole volume.
But if all users have access to same shares anyway, it won't give you any advantage.

Thanks warri,
let's put it simply:
my volume is UFS (/mnt/volume).
One user, one group, one CIFS share to /mnt/volume.
I read/write access /mnt/volume from Windows Explorer like a charm.
My question is concerned the creation/deletation of new folders via Windows Explorer.
Is it safe? Is it good?
Or is it better to create a new share (from Freenas GUI in a web browser) every time I need a new folder?
Thanks.

Since you have just one user, create the new folder in Windows.

I agree with gpsguy, in your case just do it via the Windows Explorer.
